Ingredients

  • 200g dark chocolate
  • 100g milk chocolate
  • 100g white chocolate
  • 4 large eggs
  • 300ml heavy cream
  • 75g sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Start by melting the dark chocolate in a bowl over simmering water.
  2. In a separate bowl, beat the egg yolks with sugar until pale and creamy.
  3. Fold the melted dark chocolate into the egg yolk mixture.
  4. Whip 150ml of heavy cream until soft peaks form and fold into the chocolate mixture.
  5. Repeat the process for both the milk and white chocolate, creating separate mousse layers.
  6. Layer the mousses in a serving dish or individual cups, starting with dark chocolate, followed by milk, and finishing with white chocolate.
  7. Chill for at least 4 hours before serving.
