  • 1 cup heavy cream
  • ¾ cup sugar
  • 1/4 cup cornstarch
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 pre-baked pie crust

Instructions

  1. In a saucepan over medium heat, combine coconut milk, heavy cream, and half of the sugar until it begins to steam.
  2. In a separate bowl, whisk together the cornstarch, remaining sugar, and egg yolks.
  3. Slowly add the hot milk mixture to the egg yolk mixture, whisking constantly.
  4. Pour everything back into the saucepan and cook until thickened, stirring continuously.
  5. Remove from heat and stir in vanilla and shredded coconut.
  6. Pour the filling into the pre-baked pie crust and refrigerate until set.
