A warm and hearty slow cooker beef stew recipe perfect for chilly evenings.

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large skillet, sear the beef in batches over medium-high heat until browned on all sides.
  2. Add the beef to the slow cooker along with the broth, carrots, potatoes, onion, garlic, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  3. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  4. Remove the bay leaf before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew in the last hour of cooking.
