- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- In a large skillet, sear the beef in batches over medium-high heat until browned on all sides.
- Add the beef to the slow cooker along with the broth, carrots, potatoes, onion, garlic, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- Remove the bay leaf before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew in the last hour of cooking.
