  • 4 large eggs
  • 4 ounces turkey bacon, chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add onion and bell pepper, sautéing until softened.
  3. Add garlic and sauté for an additional minute.
  4. Stir in the diced tomatoes, paprika, cumin, salt, and pepper. Cook on medium heat until heated through.
  5. Make small wells in the tomato mixture and crack an egg into each well.
