  • 3 ripe plantains
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe plantains in a mixing bowl.
  3. In another bowl, cream together the sugar and butter until smooth.
  4. Add the eggs and mix well.
  5. Stir in the mashed plantains and vanilla extract.
  6. In a separate bowl, combine flour, baking powder, and salt.
