Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, kidney beans, black beans, cucumber, tomatoes, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad sit for at least 30 minutes for the flavors to meld before serving.
