  • 2 cups rolled oats
  • 1 cup brown sugar
  • 1 cup milk
  • 1/2 cup maple syrup
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, maple syrup, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack to cool completely.
