- 2 cups cooked shredded chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 2 cups enchilada sauce
- 1 cup shredded cheese
- 8 tortillas
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chicken, black beans, corn, and half of the enchilada sauce.
- Fill each tortilla with the mixture, roll them up, and place in a baking dish.
- Pour the remaining enchilada sauce on top and sprinkle cheese over the top.
