  • 2 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  4. Shred the chicken using two forks and stir in the heavy cream and grated Parmesan cheese.
  5. Mix well and let it cook for an additional 30 minutes.
  6. Serve hot, garnished with extra Parmesan if desired.
