A delightful appetizer that combines the sweetness of butternut squash and apples on toasted bread, perfect for gatherings.

Ingredients

  • 1 butternut squash, peeled and diced
  • 2 apples, cored and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 baguette, sliced
  • 4 ounces goat cheese
  • 2 tablespoons honey
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the butternut squash and apples with olive oil, cinnamon, and nutmeg. Spread them on a baking sheet and roast for 25 minutes.
  3. Meanwhile, toast the baguette slices until golden.
  4. Spread goat cheese on each toasted slice.
  5. Top with the roasted butternut squash and apple mixture.
  6. Drizzle with honey and sprinkle with walnuts before serving.

Notes

  • For a vegan option, omit goat cheese and use vegan cheese.
  • Can be made ahead of time and assembled before serving.
