A delicious and hearty Mexican cornbread casserole that combines the flavors of ground beef and cornbread in one dish.

  • 1 can black beans, drained
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup cheddar cheese, shredded
  • 1 box cornbread mix
  • 1 large egg
  • 1/3 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add black beans, corn, and taco seasoning to the skillet and mix well.
  4. In a separate bowl, prepare the cornbread mix according to package instructions, adding in the egg and milk.
  5. Pour the beef mixture into a baking dish and spread evenly.
  6. Top with cornbread batter, spreading it evenly over the beef layer.
