- 2 pounds beef chuck, cut into 1-inch cubes
- 4 strips turkey bacon, chopped
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 3 carrots, sliced
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- 2 tablespoons flour
- salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, cook the turkey bacon until crisp. Remove and set aside.
- In the same pot, brown the beef cubes on all sides and remove.
- Add onion and garlic, sauté until softened.
- Stir in carrots and cook for a few more minutes.
- Return the beef and bacon to the pot, sprinkle with flour, and stir to coat.
- Add wine, broth, tomato paste, thyme, and bay leaf, and bring to a simmer.
- Cover and transfer to the oven, cooking for 2.5 to 3 hours until beef is tender.
- Adjust seasoning with salt and pepper before serving.
