A classic French dish revitalized with turkey bacon for a hearty meal.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 strips turkey bacon, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 3 carrots, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons flour
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, cook the turkey bacon until crisp. Remove and set aside.
  3. In the same pot, brown the beef cubes on all sides and remove.
  4. Add onion and garlic, sauté until softened.
  5. Stir in carrots and cook for a few more minutes.
  6. Return the beef and bacon to the pot, sprinkle with flour, and stir to coat.
  7. Add wine, broth, tomato paste, thyme, and bay leaf, and bring to a simmer.
  8. Cover and transfer to the oven, cooking for 2.5 to 3 hours until beef is tender.
  9. Adjust seasoning with salt and pepper before serving.

Notes

  • Serve with crusty bread or over mashed potatoes.
