Deliciously fluffy white chocolate raspberry muffins that are perfect for breakfast or a sweet treat.

  • ½ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup fresh raspberries
  • 1 large egg
  • ¾ cup milk
  • ⅓ cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Fold in the white chocolate chips and raspberries carefully.
  4. In another bowl, combine the egg, milk, and vegetable oil.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
