Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1/2 cup cream cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add shredded chicken, white beans, corn, cumin, chili powder, and chicken broth. Stir to combine.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in sour cream and cream cheese until melted and smooth.
  5. Season with salt and pepper to taste. Serve warm.
