A delicious and easy recipe for white chicken chili that warms you up on a chilly day.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup corn kernels
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1/2 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add minced garlic, cumin, and chili powder. Stir and cook for 1 minute.
  3. Add chicken breast and cook until browned.
  4. Pour in the chicken broth, and bring to a boil.
  5. Add white beans and corn, reduce heat and simmer for 20 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in sour cream and cilantro just before serving.

Notes

  • Add more chili powder for extra heat.
  • Top with avocado and cheese for added flavor.
