- 1 pound boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup corn kernels
- 4 cups chicken broth
- 1 cup sour cream
- 1/2 cup cilantro, chopped
- In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent.
- Add minced garlic, cumin, and chili powder. Stir and cook for 1 minute.
- Add chicken breast and cook until browned.
- Pour in the chicken broth, and bring to a boil.
- Add white beans and corn, reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Stir in sour cream and cilantro just before serving.
Notes
- Add more chili powder for extra heat.
- Top with avocado and cheese for added flavor.
