A delicious and hearty Tuscan chicken zucchini casserole that the whole family will enjoy.

  • 1 pound boneless chicken breasts, cubed
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté garlic until fragrant.
  3. Add cubed chicken and cook until browned.
  4. Add zucchini, tomatoes, and Italian seasoning, cooking until zucchini is tender.
  5. Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
