Delicious sweet potato rounds topped with blue cheese and turkey bacon for a perfect appetizer or snack.

Ingredients

  • 2 large sweet potatoes
  • 1 cup crumbled blue cheese
  • 1/2 cup cooked turkey bacon, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, and sprinkle with salt and pepper.
  4. Bake for 25 minutes until tender.
  5. Remove from the oven and sprinkle blue cheese and turkey bacon on top.
  6. Return to the oven for an additional 5 minutes, until the cheese is melted.
  7. Serve warm.

Notes

  • For a spicier version, add some red pepper flakes.
  • These can be made ahead and reheated before serving.
