- 2 large sweet potatoes
- 1 cup crumbled blue cheese
- 1/2 cup cooked turkey bacon, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
- Drizzle with olive oil, and sprinkle with salt and pepper.
- Bake for 25 minutes until tender.
- Remove from the oven and sprinkle blue cheese and turkey bacon on top.
- Return to the oven for an additional 5 minutes, until the cheese is melted.
- Serve warm.
Notes
- For a spicier version, add some red pepper flakes.
