Ingredients

  • 1 pound flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 cup cooked rice
  • 1 cup queso cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup cilantro
  • 1 lime, juiced

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Season the flank steak with garlic powder, onion powder, and chili powder.
  3. Sear the steak in the skillet for 5-7 minutes on each side, or until cooked to your desired doneness.
  4. Remove steak from the skillet and let it rest before slicing.
  5. In the same skillet, add cooked rice and stir well to combine.
  6. Pour in the queso cheese and mix until well incorporated.
  7. Add diced tomatoes and cilantro, stir, and cook for another 2-3 minutes.
  8. Slice the steak and serve over the queso rice. Squeeze fresh lime juice on top before serving.

Notes

  • For a spicy kick, add diced jalapeños to the queso mixture.
