  • 1 cup pumpkin puree
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, brown sugar, eggs, and vegetable oil.
  3. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fill muffin tins halfway with the pumpkin batter.
  6. Add a small dollop of cream cheese to the center of each muffin.
  7. Top with remaining pumpkin batter to cover the cream cheese.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let muffins cool before serving.
