- 1 cup pumpkin puree
- 1/2 cup cream cheese, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, brown sugar, eggs, and vegetable oil.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fill muffin tins halfway with the pumpkin batter.
- Add a small dollop of cream cheese to the center of each muffin.
- Top with remaining pumpkin batter to cover the cream cheese.
- Bake for 20-25 minutes or until a toothpick comes out clean.
