Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 sheet nori, cut into small squares

Instructions

  1. Cook the sushi rice according to package instructions.
  2. In a bowl, combine cooked rice with rice vinegar, soy sauce, and sriracha.
  3. In a pan, sauté shrimp until cooked through.
  4. Layer a base of sushi rice in a small mold, followed by shrimp, avocado, and cucumber.
  5. Press down gently and remove mold.
  6. Serve topped with nori squares.

Notes

  • Adjust sriracha to taste for desired spiciness.
  • Can substitute shrimp with crab or tofu for variation.
