- 1 medium spaghetti squash
- 1 cup diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half and remove the seeds.
- Drizzle olive oil on the squash halves and season with salt and pepper.
- Place squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- Once cooked, use a fork to scrape the flesh into strands.
- In a bowl, combine the spaghetti squash strands, diced tomatoes, garlic powder, Italian seasoning, and cheeses.
- Transfer the mixture back into the squash shells and bake for an additional 20 minutes.
- Serve warm.
