A comforting and healthy dish made with spaghetti squash.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds.
  3. Drizzle olive oil on the squash halves and season with salt and pepper.
  4. Place squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  5. Once cooked, use a fork to scrape the flesh into strands.
  6. In a bowl, combine the spaghetti squash strands, diced tomatoes, garlic powder, Italian seasoning, and cheeses.
  7. Transfer the mixture back into the squash shells and bake for an additional 20 minutes.
  8. Serve warm.
