2 cups cooked chicken, diced
4 slices turkey bacon, cooked and crumbled
1 cup cherry tomatoes, halved
1 cup black beans, rinsed and drained
1 cup corn, canned or frozen
1 cup romaine lettuce, chopped
1 avocado, diced
1/2 cup shredded cheese, cheddar or Mexican blend
1/4 cup red onion, diced
1/4 cup cilantro, chopped
Instructions
In a large salad bowl, combine the cooked chicken, turkey bacon, cherry tomatoes, black beans, corn, romaine lettuce, avocado, cheese, red onion, and cilantro.
Toss the ingredients together until well mixed.
Serve with your favorite dressing on top.
Notes
This salad can be made in advance and stored in the refrigerator.
Add dressing just before serving to prevent wilting.
