  • 4 large sweet potatoes
  • 1/2 cup maple syrup
  • 1/2 cup milk
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup miniature marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them until tender.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add maple syrup, milk, brown sugar, eggs, vanilla extract, and salt to the mashed sweet potatoes, and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. Top with chopped pecans and miniature marshmallows.
  7. Bake for 25-30 minutes or until the topping is golden brown.
