- 1 pound fresh green beans
- 2 cups diced potatoes
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 2 cups chicken broth
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the diced potatoes and cook for about 5 minutes.
- Stir in the green beans and Cajun seasoning.
- Pour in the chicken broth, bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
- Crumbled the cooked turkey bacon into the pot, season with salt and pepper, and cook for an additional 5 minutes.
- Remove from heat and serve warm.
