A delicious and hearty dish featuring green beans and potatoes cooked Cajun style with turkey bacon.

Ingredients

  • 1 pound fresh green beans
  • 2 cups diced potatoes
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 2 cups chicken broth
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the diced potatoes and cook for about 5 minutes.
  4. Stir in the green beans and Cajun seasoning.
  5. Pour in the chicken broth, bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
  6. Crumbled the cooked turkey bacon into the pot, season with salt and pepper, and cook for an additional 5 minutes.
  7. Remove from heat and serve warm.
