- 2 poblano peppers
- 1 pound chicken breast
- 1 can black beans, drained and rinsed
- 4 cups chicken broth
- 1 onion, diced
- 3 garlic cloves, minced

- Black pepper to taste
Instructions
- Roast the poblano peppers over an open flame until charred.
- Remove the skin, deseed, and chop the peppers.
- In a pot, sauté onion and garlic until translucent.
- Add chicken, broth, beans, and spices. Bring to a simmer.
- Cook until chicken is tender, about 20 minutes.
- Remove chicken, shred, and return to soup.
- Serve hot, garnished with cilantro if desired.
