Smoky Poblano Chicken & Black Bean Soup

A delicious and comforting soup with smoky poblano peppers, tender chicken, and hearty black beans.

Ingredients

  • 2 poblano peppers
  • 1 pound chicken breast
  • 1 can black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Roast the poblano peppers over an open flame until charred.
  2. Remove the skin, deseed, and chop the peppers.
  3. In a pot, sauté onion and garlic until translucent.
  4. Add chicken, broth, beans, and spices. Bring to a simmer.
  5. Cook until chicken is tender, about 20 minutes.
  6. Remove chicken, shred, and return to soup.
  7. Serve hot, garnished with cilantro if desired.

Notes

  • For a vegetarian version, substitute chicken with tofu.
