  • 1 cup vegetable broth

Instructions

  1. Wash and slice the courgettes.
  2. In a large pot, heat olive oil over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add courgettes and cook until slightly softened.
  5. Stir in butter beans, salt, pepper, thyme, and vegetable broth.
  6. Cover and simmer for 30 minutes.
