  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 1 cup broccoli florets

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, garlic powder, thyme, and rosemary.
  3. Sear the chicken thighs in the skillet until browned, about 4 minutes per side.
  4. Transfer the chicken to a slow cooker.
  5. Add the rice, chicken broth, lemon juice, and lemon zest to the slow cooker.
  6. Cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  7. In the last 30 minutes of cooking, add the broccoli florets.

Notes

  • For extra lemon flavor, add lemon slices on top of the chicken before cooking.
  • Feel free to substitute other vegetables for broccoli.
