- 4 chicken thighs
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 1 cup broccoli florets
- Heat the olive oil in a skillet over medium heat.
- Season the chicken thighs with salt, pepper, garlic powder, thyme, and rosemary.
- Sear the chicken thighs in the skillet until browned, about 4 minutes per side.
- Transfer the chicken to a slow cooker.
- Add the rice, chicken broth, lemon juice, and lemon zest to the slow cooker.
- Cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
- In the last 30 minutes of cooking, add the broccoli florets.
