  • 3 pounds corned beef brisket
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chopped cabbage
  • 4 large carrots, sliced
  • 6 medium potatoes, diced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 bay leaves

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the chopped onion and minced garlic on top.
  3. Layer the chopped cabbage, sliced carrots, and diced potatoes over the meat.
  4. In a separate bowl, mix the beef broth, Worcestershire sauce, black pepper, thyme, and bay leaves. Pour over the vegetables and meat.
  5. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the beef is tender.
  6. Remove the bay leaves and slice the corned beef before serving.
