A comforting and easy recipe for chicken and wild rice soup that can be made in a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the wild rice, chicken broth, carrots, celery, onion, garlic, thyme, and rosemary.
  3. Stir to combine and cover the slow cooker.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the slow cooker.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Cook for an additional 30 minutes on low.

Notes

  • For best results, use uncooked wild rice.
  • You can add other vegetables like peas or corn for extra flavor.
