- 1 head cauliflower, chopped
- 4 slices turkey bacon, cooked and chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add diced onion and garlic to the pot and sauté until translucent.
- Add chopped cauliflower and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer until the cauliflower is tender.
- Blend the mixture until smooth, then stir in the heavy cream and cheddar cheese until melted.
- Season with salt and pepper to taste. Serve topped with turkey bacon.
