A creamy and delicious cauliflower soup enhanced with turkey bacon.

Ingredients

  • 1 head cauliflower, chopped
  • 4 slices turkey bacon, cooked and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add diced onion and garlic to the pot and sauté until translucent.
  3. Add chopped cauliflower and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer until the cauliflower is tender.
  4. Blend the mixture until smooth, then stir in the heavy cream and cheddar cheese until melted.
  5. Season with salt and pepper to taste. Serve topped with turkey bacon.

Notes

  • This soup can be topped with additional cheese or herbs if desired.
  • For a spicier kick, add red pepper flakes while cooking.
