A delicious twist on sushi that combines the flavors of salmon in a comforting bake.

Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillets
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 sheet nori, chopped
  • 1/4 cup green onions, sliced
  • 2 tablespoons furikake

Instructions

  1. Preheat oven to 375°F.
  2. Rinse sushi rice under cold water until water runs clear.
  3. Combine sushi rice and water in a pot, bring to a boil, then simmer covered for 20 minutes.
  4. While rice cooks, prepare the salmon by baking or pan-searing until cooked through.
  5. In a bowl, mix mayonnaise, sriracha, and soy sauce to create the sauce.
  6. Once the rice is ready, spread it evenly in a baking dish.
  7. Add the cooked salmon, chopped nori, and drizzle the sauce over the top.
  8. Bake for 15-20 minutes until heated through.
  9. Garnish with green onions and furikake before serving.

Notes

  • For a spicier kick, adjust the amount of sriracha to taste.
  • Feel free to add additional toppings like avocado or cucumber.
