  • 1 cup vegetable broth
  • 1 cup cheddar cheese, shredded
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the tomatoes on a baking sheet and drizzle with olive oil.
  3. Roast for 25-30 minutes until caramelized.
  4. In a pot, sauté onions and garlic until translucent.
  5. Add the roasted tomatoes and vegetable broth, bring to a simmer.
