  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, green beans)
  • 1 package dumplings (fresh or frozen)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and red curry paste, cook for 1-2 minutes.
  3. Pour in vegetable broth and coconut milk, stir to combine.
  4. Add mixed vegetables and bring to a simmer.
  5. Once simmering, add the dumplings and cook according to package instructions.
  6. Stir in soy sauce and lime juice, taste, and adjust seasoning.
  7. Serve hot, garnished with fresh cilantro.
