  • 1 cup red beans
  • 2 cups rice
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • salt and pepper to taste

Instructions

  1. Rinse and soak the red beans for several hours or overnight.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. Add onion and garlic to the pot, cooking until tender.
  4. Add the soaked beans, diced chicken ham, spices, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour.
  6. Stir in the rice and cook until the rice is tender and the mixture is thickened.
  7. Serve hot with chopped turkey bacon on top.
