  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 can (15 oz) pumpkin puree
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, brown sugar, baking powder, and salt.
  3. Add the melted butter and mix until crumbly.
  4. Press the mixture into the bottom of a greased 9×13 inch pan.
  5. In another bowl, combine pumpkin puree, eggs, granulated sugar, vanilla, cinnamon, nutmeg, ginger, and heavy cream. Mix until smooth.
  6. Pour the pumpkin mixture over the crust.
  7. Bake for 30-35 minutes or until set.
  8. Let it cool before slicing into bars.
