  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the dry ingredients: flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, whisk together the sugars, pumpkin puree, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients, then fold in the pecans.
  5. Pour the batter into greased loaf pans.
  6. Bake for 60 minutes or until a toothpick comes out clean.
