  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, oil, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla extract, mixing well.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes or until cookies are set and edges are slightly firm.
