A delightful and easy to make fall treat that combines the creamy texture of cottage cheese with the rich flavor of pumpkin.

  • 2 cups cottage cheese
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup crushed graham crackers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, pumpkin puree, sugar, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
  3. Add crushed graham crackers and gently fold them into the mixture.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 45-50 minutes or until set.
  6. Allow to cool before serving.
