1 cup pumpkin puree
8 ounces cream cheese, softened
1 cup heavy cream
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 package graham crackers, crushed
1/4 cup pecans, chopped (optional)
Instructions
In a large bowl, beat the cream cheese until smooth.
Add the pumpkin puree, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the pumpkin mixture.
In a trifle dish or individual cups, layer the pumpkin cheesecake mixture and crushed graham crackers. Repeat until all ingredients are used, finishing with a layer of the cheesecake mixture on top.
Sprinkle with chopped pecans if desired. Refrigerate for at least 4 hours before serving.
Notes
For an extra touch, top with whipped cream and a sprinkle of cinnamon just before serving.
