  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 orange, juiced and zested
  • 1 pint cherry tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic, orange juice, zest, salt, pepper, and thyme.
  3. Add chicken thighs to the bowl and coat well with the marinade.
  4. Transfer the chicken to a baking dish and scatter cherry tomatoes around.
  5. Bake for 25-30 minutes or until chicken is cooked through and tomatoes are burst.
  6. Serve warm.
