Ingredients

  • 12 ounces penne pasta
  • 1 pound cajun sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cups spinach, fresh

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add garlic and sausage, cooking until sausage is browned.
  3. Stir in cajun seasoning, then add the pasta, chicken broth, and diced tomatoes.
  4. Bring to a boil, then reduce heat and simmer until pasta is tender.
  5. Stir in heavy cream and cheese until melted.
  6. Add fresh spinach and cook until wilted.
