  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the beef and brown on all sides.
  3. Add the onions and garlic, sauté for 2-3 minutes.
  4. Pour in the beef broth and add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  6. Remove bay leaf before serving.
