- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon vegetable oil
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt to taste
