1 cup graham cracker crumbs
1/4 cup unsalted butter, melted
1 cup cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/4 cup fresh lemon juice
1 tablespoon lemon zest
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed.
Press the mixture into the bottom of the liners to form the crust.
In a separate bowl, beat cream cheese and sugar until smooth.
Add vanilla, eggs, lemon juice, and lemon zest, mixing until well combined.
Pour the cheesecake mixture over the crust in each liner.
Bake for 18-20 minutes or until set.
Allow to cool, then refrigerate for at least 2 hours before serving.
Notes
For a sweeter taste, increase the sugar slightly.
