  • 4 medium zucchinis
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a pan, heat olive oil and sauté onions until translucent.
  4. Add ground beef, tomatoes, rice, and spices to the pan, cook until beef is browned.
  5. Stuff zucchinis with the mixture and place them in a baking dish.
  6. Pour vegetable broth over the stuffed zucchinis.
  7. Bake for 30-40 minutes until zucchinis are tender.
  8. Serve warm.
