A delicious Middle Eastern dish featuring tender zucchini stuffed with a flavorful mixture of spices, rice, and ground meat.

  • 6 medium zucchinis
  • 1 cup rice
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups tomato sauce
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the zucchinis by slicing off the tops and scooping out the insides.
  2. In a pan, heat olive oil and sauté onions and garlic until transparent.
  3. Add ground beef and cook until browned.
  4. Stir in rice, cumin, allspice, salt, pepper, and chopped zucchini insides; cook for a few minutes.
  5. Stuff the zucchinis with the filling.
  6. Pour tomato sauce over stuffed zucchinis in a baking dish.
  7. Bake in a preheated oven at 350°F (175°C) for about 40 minutes.

Notes

  • Feel free to substitute ground beef with ground turkey for a leaner option.
  • Top with additional parsley before serving for a fresh touch.
