  • 4 slices turkey bacon
  • 1 cup corn, grilled
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 2 tablespoons mayonnaise
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook the pasta according to package instructions, then drain and cool.
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a large bowl, combine pasta, corn, red onion, cilantro, cotija cheese, lime juice, mayonnaise, chili powder, and salt.
  4. Add the chopped turkey bacon and mix thoroughly.
  5. Chill in the refrigerator for at least 30 minutes before serving.
