- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out some of the flesh.
- In a bowl, mix cooked quinoa, cherry tomatoes, feta cheese, olives, garlic, oregano, salt, and pepper.
- Fill the zucchini halves with the mixture and place them on a baking sheet.
- Drizzle with olive oil and bake for 25-30 minutes.
- Serve warm and enjoy!

- Feel free to add any other vegetables you have on hand to the stuffing.
- You can substitute feta with goat cheese if preferred.
