This Mediterranean Stuffed Zucchini Recipe is a delicious and easy dish that the whole family will love!

Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out some of the flesh.
  3. In a bowl, mix cooked quinoa, cherry tomatoes, feta cheese, olives, garlic, oregano, salt, and pepper.
  4. Fill the zucchini halves with the mixture and place them on a baking sheet.
  5. Drizzle with olive oil and bake for 25-30 minutes.
  6. Serve warm and enjoy!

Notes

  • Feel free to add any other vegetables you have on hand to the stuffing.
  • You can substitute feta with goat cheese if preferred.
