  • 1 can chickpeas, drained and rinsed

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups spinach, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions
