Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat and sauté onions, carrots, and celery until softened.
  2. Add garlic and cook for an additional minute.
  3. Stir in the chicken broth and bring to a boil.
  4. Add chicken thighs and rice, reduce heat, and simmer until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in dill and lemon juice, and season with salt and pepper before serving.
