Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon lemon zest
  • 1/2 cup lemon juice
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and juice.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Add the dry ingredients to the wet mixture alternately with the milk, starting and ending with the flour mixture.
  7. Divide the batter evenly among the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Notes

  • For an extra zing, add more lemon zest to the frosting.
  • You can substitute buttermilk for whole milk for a richer flavor.
